This evening, while I was trying to focus on a paper I was reading for my work, I thought it would have been very nice to eat a piece of cake at tea-time... but unfortunately there was any cake in my kitchen! In fact, as I've always had troubles in raising the dough, I rationally decided some months ago that I wouldn't have lost time anymore in making cakes.... 

Anyway I thought "Well, until some weeks ago I also had problems in raising the dough for pizza, but now I am quite able to prepare a good pizza! Why not try again with cakes?". 

So, I opened my fridge and there were any eggs.... ARGH! In these cases, internet may be your best friend as you have just to entry the key "cake AND no eggs" on google to find a lot of intriguing recipes which can brilliantly solve your problem!

I choose the following recipe which is good and fast! And also it's without butter....

First, you need to mix 200 gr of "00" white flour, 200 gr of granulated sugar, 80 gr of bitter cocoa powder, a sprinkle of salt, some cinnamon (chose the quantity by yourselves, but do not exaggerate!), some lemon peel and baking powder.

Then, add 350 ml of pre-heated milk. Add it slowly, mixing well the dough to avoid lumps formation.

Put the dough in a baking pan and cook in a pre-heated over (180 degrees) for 35-40 minutes.

 

Finally, add some icing sugar and enjoy with hot tea!
